Ladyfish or skipjack

A delicacy of coastal snacks, made with ladyfish and flavored with achiote, which gives it a unique flavor that you have to try.

Preparation time: 1 hour.

Ingredients
  1. 1 kg. skipjack
  2. 200 gr. Tomato
  3. 100 gr. Onion
  4. 50 gr. green chile
  5. 50 gr. Coriander
  6. 2 pcs. Egg
  7. 60 gr. Mayonnaise
  8. 2 gr. Achiote (annatto)
  9. Salt to taste.
  10. 1.5 liters Wate
Preparation
  1. Wash, disinfect and chop, tomato, onion, green chili, coriander, and set aside.
  2. Remove the fishbones from the pulp of the ladyfish
  3. Mix the pulp with the vegetables, add mayonnaise, achiote, eggs and salt.
  4. Make sausages by placing the mixture on a sheet of aluminum foil and roll tightly at the ends.
  5. Place the rolls in the boiling water and cook for 45 min. Approximately.
  6. Remove the sausages from the heat, drain and remove the aluminum foil.
  7. Fry the sausages in hot oil.
  8. It is served with Mexican sauce, lemon juice and jalapeño pepper slices.
Tips:

At the time of mixing, remove the fishbones that are observed.
