Sour atole

A delight to the palate,

Ancient yellow corn drink that is distinguished by the slight sour taste produced by its fermentation.

Atol agrio

Preparation time: 2 hours

Ingredients
  1. 2 Kg. Tender yellow corn
  2. 500 gr. Sugar
  3. 2 slices Cinnamon slices
  4. 4 liters Wate
Preparation
  1. Soak the corn for 3 days, until it is sour.
  2. On the fourth day, wash the corn and grind it finely.
  3. Mix the dough with the water (1 of dough for 2 of water), beat until both ingredients are perfectly incorporatedthen let it stand 8 hours.
  4. Strain the water from the dough with the help of a cloth, let it rest for an hour.
  5. Pour the water from the dough into a pot, add sugar and cinnamon, when it starts to boil add the dough sediment, stir constantly. Let it boil until it thickens.
