Rotten pot

Olla Podrida

Preparation time: 1 hour

Ingredients
  1. 1 kg. Fried pork rib
  2. 200 gr. Fried sausage
  3. 100 gr. Ham
  4. 250 gr. (precooked) Pork feet
  5. 200 gr. Pork rind
  6. 1 kg. Kidney beans
  7. 150 gr. Tomato
  8. 100 gr. Onion
  9. 90 gr. Chipotle peppers.
  10. 3 cloves of garlic.
  11. 5 epazote leaves.
  12. Salt
Preparation
  1. Clean and wash the beans.
  2. Blend the tomatoes, onion, chilies and garlic.
  3. Cook the beans, then add the meat, sausage and what was blended.
  4. Add the epazote and cook for 10 min.
  5. Serve hot.
Tips:

This dish is traditionally prepared with red beans but they can be substituted for any other variety of beans.
