Pitaul tamale

Appetizing dish seasoned with coriander and chili pepper and prepared with tender red beans. A traditional dish of Comiteca cuisine.

 

Tamal de pitaul

Preparation time: 1 hour.

Ingredients
  1. 1 kg. Nixtamalized corn dough
  2. 400 gr. Tender red beans
  3. 500 gr. lard.
  4. 1 bunch Coriander
  5. 1 pc. Tree chili pepper
  6. 20 pcs. Totomoxtle sheet
  7. Salt
Preparation
  1. Finely chop the coriander and the tree chili pepper.
  2. Wash the tender beans.
  3. Mix the dough, salt and lard until obtaining a smooth and homogeneous dough, add the coriander, chili and beans.
  4. Place a portion of dough on the totomoxtle sheet and wrap.
  5. Cook in a steamer for 45 min. Approximately.
Tips:

It is very important to check that the beans are tender so that they are cooked perfectly.
