Pickled Pork feet (patitas al vinagre)

Ingredients
  1. 1 kg. Pork feet
  2. 100 gr. Onions
  3. 250 gr. Carrots
  4. 100 gr. jalapeno pepper
  5. 150 ml. Vinegar
  6. 4 pcs. Garlic cloves
  7. 5 twigs. Thyme
  8. 5 pcs. Peppers
  9. 5 pcs. Clove
  10. 10 pcs. Bay leaves
  11. 3 pcs. Oregano
  12. Sugar
Preparation
  1. Wash the pork feet very well.
  2. Cut the carrots into slices, fillet the onions and cut the chilies into julienne.
  3. Boil the pork feet with half the spices and when they are cooked remove them from the heat and wash them again.
  4. Put the pork feet back in a pot and cook them with the other spices, the vegetables, vinegar and sugar then cook until the carrots are soft.
Tips:

Do not overcook pork feet so that they do not break into pieces. After the first cooking wash them thoroughly to remove excess collagen.
