Delicious appetizer made with French bread, refried beans, pork leg, and a preparation of carrots cooked with vinegar, sugar, spices, and sweet and sour sauce.
Preparation time: 15 minutes.
Ingredients
15 pcs. French type bread
200 gr. Ground red beans
150 gr. Mayonnaise
Aged cheese to your preference
500 gr. Pork leg
5 pcs. Bay leaves
4 pcs. Whole pepper
3 pcs. Thyme sprigs
3 pcs. Clove
1 pc. Ancho chili pepper
1 pc. guajillo chili pepper
60 gr. Onion
1 large clove of garlic
For the picles:
700 gr. Carrots
100 gr. Onion
10 pcs. Bay leaves
½ teaspoon Sugar
150 ml. Vinegar
Salt
80gr. Serrano chili pepper.

Preparation
Cook the pork with spices, remove from heat; shred the meat.
Picles: Peel the carrots and grate them, slice the onion. Unvein and cut the serrano peppers. In a saucepan, fry the onion and garlic; add the carrot, chili peppers, spices, sugar, salt and vinegar; cook until vegetables are soft. check seasoning.
Sauce: Clean and devein the chili peppers, hydrate in hot water. Blend the chili peppers with onion, garlic, sugar, vinegar, oregano and thyme. The sauce should be bittersweet.
Cut the bread.
Compound bread: To one cover of bread, spread mayonnaise and to the other refried beans, place on it the meat, the picles, aged cheese and sauce.
Tips:
Make sure the beans have a consistent texture so that they are not difficult to spread on the bread. It is traditionally made with pork but it could be substituted for chicken.
