Palmito en escabeche (Pickled palmito)

Savor this delicacy, made from the heart of the palm that is combined with the sweetness of the carrot and a delicate touch of spice.

 

Palmito en escabeche

Preparation time: 25 minutes.

Ingredients
  1. 500 gr. Palmito
  2. 200 gr. Onion.
  3. 300 gr. Carrot.
  4. 50 gr. Chili Peppers.
  5. 1 pc. Sprig of thyme.
  6. 1 pc. Sprig of oregano
  7. 6 pcs. Large pepper
  8. Salt
  9. 300 ml. Vinegar.
  10. 80 gr. Panela (piloncillo) or sugar
Preparation
  1. Cut the carrot, the chili and the heart of palmito into small cubes And cut the onion into thin slices.
  2. Grind the panela.
  3. Mix the vegetables, thyme, oregano, allspice, salt and the panela.
  4. Place in a glass container and add vinegar until covered, let it marinate 2 or more days.
  5. Serve cold as a garnish for other dishes.
Tips:

Use homemade vinegar.
