Chinculguajes

An exquisite heritage of the original peoples of Chiapas. Nixtamal dough stuffed with ground refried beans with coriander and chili.

Try them with green sauce.

Chinculguajes

Preparation time: 1 hour.

Ingredients
  1. 1 kg. Nixtamalized corn dough
  2. 250 gr. Cooked red beans
  3. 100 gr. Lard
  4. Salt
  5. 4 pcs. Coriander sprigs
  6. 100 gr. Of onion
  7. 4 pcs. From dried chili
Preparation
  1. Mix the corn dough with the salt, make dough balls of 50 gr
  2. Approximately.
  3. Finely chop the onion, coriander and chili peppers.
  4. Blend the beans.
  5. Fry the onion, add the beans, the coriander and the chili peppers, cook until the beans get dry, check the seasoning.
  6. Make a hole in the dough balls and fill with the beans. Cover with the
    same dough and form a little ball of dough.
  7. Cook on a comal.
     
Tips:

Fry the beans perfectly until it takes a firm consistency so that it does not become difficult when filling.
