Chamorro comiteco

Preparation time: 1 hour

Ingredients
  1. 1 kg. Pork shank
  2. 2 pcs. guajillo chili pepper
  3. 5 pcs. Whole pepper
  4. 4 pcs. Thyme sprig
  5. 3 small garlic cloves
  6. 50 gr. Onion
  7. 1 pc. Ancho chili pepper
  8. Salt
  9. 6 pcs. Bay leaves
Picles
  1. 700 gr. Carrots
  2. 100 gr. Onion
  3. 10 gr. Bay leaves
  4. 120 gr. Sugar
  5. 100 ml. Vinegar
  6. 3 pcs. Chile serrano
  7. Water
  8. Sweet and sour sauce.
Preparation
  1. Clean the guajillo chili and the ancho chili and hydrate them in hot water for 5 minutes, then blend with garlic, thyme and pepper.
  2. Wash the pork stalks.
  3. Place the stalks in a pot, add the previous preparation, the bay leaves, salt and add water, cook over medium heat.
  4. Remove the cooked pork stalks from the pot and reserve.
  5. Picles: Wash the carrots, then peel them, cut them into strips and slice the onion. In a saucepan, fry the onion and garlic then add the carrot, spices, sugar, salt and vinegar; cook until vegetables are soft; check seasoning.
  6. Assembly: serve the chamorros with the picles and the sweet and sour sauce, accompany with crisps.
Tips:

It can be cooked in a pressure cooker to make it faster.
