Ingredients
1 kg. Pork shank
2 pcs. guajillo chili pepper
5 pcs. Whole pepper
4 pcs. Thyme sprig
3 small garlic cloves
50 gr. Onion
1 pc. Ancho chili pepper
Salt
6 pcs. Bay leaves
Picles
700 gr. Carrots
100 gr. Onion
10 gr. Bay leaves
120 gr. Sugar
100 ml. Vinegar
3 pcs. Chile serrano

Sweet and sour sauce.
Preparation
Clean the guajillo chili and the ancho chili and hydrate them in hot water for 5 minutes, then blend with garlic, thyme and pepper.
Wash the pork stalks.
Place the stalks in a pot, add the previous preparation, the bay leaves, salt and add water, cook over medium heat.
Remove the cooked pork stalks from the pot and reserve.
Picles: Wash the carrots, then peel them, cut them into strips and slice the onion. In a saucepan, fry the onion and garlic then add the carrot, spices, sugar, salt and vinegar; cook until vegetables are soft; check seasoning.
Assembly: serve the chamorros with the picles and the sweet and sour sauce, accompany with crisps.
