Rabbit in Sihuamonte

Food that is distinguished by its delicious smoked flavor, obtained by roasting the meat,  and later it is prepared in broth, which gives it a unique flavor.
Nigüijuti

Preparation time: 1 hour

Ingredients
  1. 1.5 kg. Rabbit
  2. 120 gr. Corn dough
  3. 45 gr. Oil
  4. 2 large cloves Garlic
  5. 200 gr. Tomato
  6. 200 gr. potatoes
  7. 100 gr. Onion
  8. 5 gr. guajillo chili pepper
  9. 5 Epazote leaves
  10. Salt
  11. 3 Lt . Water
Preparation
  1. Peel and cut the potatoes into wedges.
  2. Cut the onions and tomatoes into thin slices.
  3. Devein the guajillo chili and fry it together with the garlic, onions and tomatoes, then blend everything.
  4. Clean, wash, cut the rabbit into pieces and bake until golden brown.
  5. Once the rabbit is browned, cook it in salted water.
  6. When it starts to boil, add the potatoes and the ingredients that were previously blended.
  7. Dissolve the dough in a little water and add it to the broth together with the epazote.
  8. Boil until the rabbit is well cooked.
  9. Serve hot.
Tips:

Rabbit meat can be substituted for beef.
