Pork jaw (carraca)

Exquisite snack that will surprise your palate, made with fried pork head. It is usually served with a tomato, onion and coriander-based salad.

 

Carraca de cerdo

Preparation time: 1 hour

Ingredients
  1. 1 kg. Pig head
  2. 500 gr. Lard
  3. 5 pcs. Laurel sprigs
  4. 5 pcs. Thyme sprigs
  5. 4 gr. Oregano
  6. 10 pcs whole pepper
  7. 100 gr. Sugar
  8. 7 pcs. Small garlic cloves
  9. Salt
Preparation
  1. Wash the pork head meat.
  2. Cook the meat in a pot with the spices, garlic, lard, sugar made caramel and salt.
  3. Cook for approximately 50 minutes.
  4. Once the meat is cooked remove the bones and cut it into small pieces, then fry it in lard to make pork rinds.
  5. Suggestion: It is commonly served with a pico de gallo. (Mexican salad)
Tips:

Serve the snack hot and eat with tortilla chips
