Huacasis caldu

Typical dish and protagonists of the Zoque party.

Beef broth that is made with beef skirt it is characterized by having chickpeas and cabbage, giving it a unique touch.

Huacasis caldu

Preparation time: 1 hour

Ingredients
  1. 1 Kg. Beef rib
  2. 250 gr. Precooked chickpeas
  3. 200 gr. Cabbage
  4. 100 gr. Tomato
  5. 50 gr. Onion
  6. 4 pcs. Garlic cloves
  7. Salt
  8. 3 gr. Annatto paste (achiote)
Preparation
  1. Cut the meat into pieces then cook with salt and the annatto which was previously diluted in water.
  2. Cut the onions and tomato into slices and blend.
  3. When the meat is half cooked, add the blended ingredients with the chickpeas and cabbage.
Tips:

Cook the chickpeas the day before.
