Typical dish and protagonists of the Zoque party.
Beef broth that is made with beef skirt it is characterized by having chickpeas and cabbage, giving it a unique touch.
Preparation time: 1 hour
Ingredients
- 1 Kg. Beef rib
- 250 gr. Precooked chickpeas
- 200 gr. Cabbage
- 100 gr. Tomato
- 50 gr. Onion
- 4 pcs. Garlic cloves
- Salt
- 3 gr. Annatto paste (achiote)
Preparation
- Cut the meat into pieces then cook with salt and the annatto which was previously diluted in water.
- Cut the onions and tomato into slices and blend.
- When the meat is half cooked, add the blended ingredients with the chickpeas and cabbage.
Cook the chickpeas the day before.
