Fried tripe

Delicious dish, typical of the snack culture of Tuxtla; fried beef tripe served with corn tortillas and green sauce.

 

Tripa frita

Preparation time: 1 hour 20 minutes

Ingredients
  1. 1 kg. Washed beef tripe
  2. 350 gr. Onion
  3. ½ head of garlic
  4. Salt
  5. 200 gr. Lemons
Preparation
  1. Marinate the tripe in the lemon juice.
  2. Cook the tripe in a pot with water, salt, garlic and half of the onion, until soft.
  3. Remove the tripe from the heat and cut into small pieces and fillet the rest of the onion.
  4. On a frying pan, fry the tripe, once it is golden, add the onion.
Tips:

Leaving it in lemon juice for a while reduces the strong smell of the gut.
