Delicious dish, typical of the snack culture of Tuxtla; fried beef tripe served with corn tortillas and green sauce.
Preparation time: 1 hour 20 minutes
Ingredients
- 1 kg. Washed beef tripe
- 350 gr. Onion
- ½ head of garlic
- Salt
- 200 gr. Lemons
Preparation
- Marinate the tripe in the lemon juice.
- Cook the tripe in a pot with water, salt, garlic and half of the onion, until soft.
- Remove the tripe from the heat and cut into small pieces and fillet the rest of the onion.
- On a frying pan, fry the tripe, once it is golden, add the onion.
Tips:
Leaving it in lemon juice for a while reduces the strong smell of the gut.
