Preparation time: 1 hour
Ingredients
300 gr. Pork leg
5 pcs. Cloves
5 gr. Thyme
5 gr. bay leaves
2 pcs Chile guajillo
2 pcs. Chile wide
1 pc. Garlic
Salt
15 pcs Tortilla toast
300 ml. Oil
300 gr. Ground black beans.
25 gr. Aged cheese
1 pc. Romaine lettuce.
Picles:
100 ml. Vinegar
150 gr. Carrots
100 gr. beetroot.
10 pcs. Whole pepper.
3 gr. Of oregano.
Preparation
Tuck the pork loin with the cloves, marinate it with salt and lemon for 24 hours, after that prepare a marinade with the ancho chilies, guajillo chili, pepper, garlic, thyme, bay leaves and cook the pork in this marinade.
Peel the carrot, beet and grate, separately fillet the onion.
In a saucepan, sauté half the onion and garlic then add the carrots, spices, sugar, salt and vinegar, cook until the vegetables are soft, check the flavor. Do the same procedure for the beets.
Wash, disinfect and cut the lettuce.
Cut the pork into thin slices.
Assembly: Spread the beans on the tortilla toast, put the lettuce alternating with the carrots and beets, place a slice of meat and sprinkle some cheese.
Tips:
Do not make them too long in advance because the toast gets wet.
