Workshop of artisan elaboration of the Chiapas mole, representative of the colonial time in Chiapas. This activity begins at nine in the morning, departing from the emblematic and mystical restaurant Fogón de Jovel, when you enter it is easy to realize that it is the place where the magic of transforming Chiapas crops begins, they turn crops into delicious dishes that are served with all affection, full of history, traditions and secrets that the Mayan grandmothers and ancestors have kept in every corner of this land. Once you have visited the restaurant, you have to walk to the colorful public market to purchase the necessary supplies for the Chiapas mole.
With this practice, we learn about fair trade, looking for fresh fruits and vegetables produced by peasants in the mountains of Chiapas. This tour takes place alongside the picturesque streets of the magical town and buildings that add identity to the destination. Back at the restaurant, we start with the workshop of the elaboration of the long-awaited mole, awakening our senses with each ingredient, throughout the process, along with the stories that the chef of San Cristobal gastronomy tells us, until the moment of the food.
