1 kg. pork loin
9 pcs. guajillo chile
100 ml. White vinegar
4 pcs. Allspice
4 pcs. Clove
150 gr. Onion
4 garlic cloves
5 gr. Thyme
5 gr. Oregano
5 pcs. Bay leaves

Preparation
Clean and cut the meat into medium pieces.
Devein and hydrate the chilies with hot water then blend them with garlic, onion, spices and vinegar after that strain and save.
Marinate the meat and let it rest for 12 hours.
Season the meat with salt and cook over a low heat, then bake at 200 ° c until a crust forms, after that, bathe constantly with the sauce to avoid that dries out.
When the meat is cooked and soft, remove from the oven.
Assembly: To serve, decorate with lettuce, onion slices and radishes.
