Pepita with Tasajo (jerky)

The "Great Food" of Chiapa de Corzo, you have to try it!

Magnificent dish known as "Great Food". Strips of dried and salty meat are
bathed in a sauce made with pumpkin seeds, ground rice and achiote. Enjoy its great taste!

Pepita con Tasajo

Preparation time: 1 hours.

  1. 1 kg. dried meat
  2. 200 gr. Ground pumpkin seeds
  3. 125 gr. Lard
  4. 30 gr. Rice
  5. 5 gr. achiote (annatto)
  6. 150 gr. Onion
  7. Laurel
  8. Garlic
  9. Pepper
  1. Cook the dried meat in plenty of water with the spices and half the onion. Strain the cooking broth and save.
  2. Wash and soak the rice, then let it dry.
  3. Grind the dry rice and the achiote seeds, until obtaining a flour.
  4. Strain the seed to remove impurities.
  5. In a pan with hot lard, add the seeds and brown them then add the cooking broth and the rice with the achiote (annatto).
  6. Move constantly to avoid sticking, the consistency of the sauce must be semi-thick, add the meat and let it boil.
  7. Serve a portion of the meat accompanied by the sauce.

Once the pepita sauce is prepared, it can be blended to make it smoother.
